Sweet Potato Skins and Pancake Fruit Rings

I enjoy trying out new recipes as often as possible with scheduling, budget, and of course energy level. After just moving, I was up to my eyeballs in boxes to unpack, rooms to organize, new spaces to design, and a nearly two year old who needed some lovin’s.  I managed to cook up some “Healthy Mexican Sweet Potato Skins” and some “Fruit Rings” – both turned out quite well. Sweet Potato Skins

These sweet potato skins were absolutely fantastic! Sure, I set off the smoke detector while roasting the corn and the whole house filled with corn-flavored clouds. But! After following this recipe it was totally worth having to open the windows and air out the place. Plus, we got the bonus of hearing several trains pass by while we had our lunch.

Fruit Rings and Blueberry Sauce

This recipe gave the idea for the fruit rings. I used pineapple rings and apple rings. Instead of using Bisquick, I used a homemade recipe with flour, baking powder, buttermilk, an egg, and some olive oil. When I had enough rings, I used the rest of the batter for regular pancakes by adding in some cinnamon and nutmeg for more flavor. The syrup is just fresh blueberries that I’ve heated up  in the microwave (I usually do it on the stove, but was in a bit of a hurry) and then squashed up with a fork until tons of juice was released. P (my partner) favored the apple rings, but preferred the normal pancakes. Personally, I thought the pineapple rings were the best.
